Strawberry Bruschetta

1 - crusty Italian roll, cut into 16 slices (hoggies and blue taco chips work well too)
1 pint fresh strawberries, hulled and chopped (I do a combination of big and small dices)
1/2 red onion chopped ("")
2 TBSP FRESH basil leaves thinly sliced (please use fresh for the best flavor)
2 tsp balsamic vinegar
1 tsp sugar (you can use splenda or equal too)
1/2 tsp evoo
1/4 tsp salt

Preheat the oven to 350*F
Place the bread on a baking sheet in a single layer and lightly spray with nonstick spray. Bake until golden brown.
Combine all ingredient in a small bowl. Mix well
Top toast with 1 tbsp of mixture, serve at once.

The bruschetta can be made earlier in the day and even I used it 2 days later. Just don't put it on the bread until ready to eat.

Enjoy this treat with a glass of wine and a bit of gossip!

Kirk Hale Corthum


Today is a very sad day for me, as my friend Kirk has passed. He was a wonderful person. He smiled from ear to ear every time I saw him and always had something funny to say even in hard times. He was only 36 years old. Please say a prayer for his family as I know they will have a terrible time with the loss.
Kirk may you rest in peace and enjoy fishing with the big guy!

Wedding and Prom Season Begins

This past weekend, starting on Thursday, officially began the wedding and prom season for work. The chaos, the madness, and then the ending beauty is all well worth the little bit of sanity I still have. (Which as we all know is not very much to begin with).

I find that the week of an event so much can change. Bridal members have issues, your count gains or reduces (this weekend it went up 64%, so not typical), the groom disappears, you can't use the decorations you thought you could, members of the party are too young or too old to get in, and finally butterflies are added to the mix.

Where as it was a little bit of a struggle for the wedding, I've decided that I rather take that than realizing at the prom... I'm OLD and totally out of fashion (or at least old enough to know better, which I guess isn't that bad) :(

Retirement...Uh!

This past week Herbie had the workweek off. Every morning while I was still in bed with him when I'd start to get up, he would grab me, hold me for just a bit, smell my hair, and then kiss my cheek and let me go get ready for the day. It was the most loving and wonderful feeling a girl could ask for. I would wake up feeling warm, loved, and know my day would be all right knowing I could come home to him.
I hope our retirement is just the same love hold as it is now. I don't want to rush life by any means, but I can't wait to spend time just with Herbie, have no worries, and relax.


Here's to a great retirement and a vacation together soon, my love!
